Kemps Creek Farm
Troy from Kemps Creek Farm has been farming for 11 years and started his mushroom farm in 2006, then started doing outdoor crops a few years later. The farm grows mushrooms, raw honey, kale, cauliflower, broccoli, tomatoes, herbs, rhubarb, zucchini, pumpkins, corn, broad beans, snow peas, beetroot, beans, Brussel sprouts, spaghetti squash, squash, lettuce, capsicum, chilli.
The main differences the Kemps Creek Farm have are the 25 bee hives and growing mushrooms. Mushroom farms compared to vegetable farms are less common as it is much harder and requires more detail to grow mushrooms. Troy states "When growing mushrooms you have to be able to change the environment to suit perfect mushroom growing conditions; you have to the control the room to be able to hold CO2, humidity, air temperatures and air flow, all whilst bringing fresh air from outside which does not make optimum growing. This is challenging as the environmental conditions change daily."
The Kemps Creek Farm are looking at planting yellow grosse lissy tomatoes, and red pear tomatoes to be provided exclusively for Country Club Gledswood Hills. Troy comments that it is great to have his produce sold locally, and to be able to go to the Country Club Brasserie and see what can be done with quality produce in the hands of professional chefs. "It has been great working with Chef Luke and the team and being able to grow and supply different produce as the season's change. Also, it is a pleasure sitting in restaurants hearing the customers saying how nice the food they are eating is, knowing I have had a small part in the food they are sitting down enjoying". "I also love being able to enjoy the freshest vegetables which I grow and also eat, knowing they are not full of chemicals as we strive to use little to no chemicals on our farm."
